Australis Aquaculture: Raising the Bar with Barramundi


Australis Barramundi is the product
of a new model of sustainable aquaculture in the marine tropics. Before founding Australis, I spent years searching globally for a fish that would
be truly delicious, that could enhance human health, and would be amenable to
sustainable farming. Barramundi brings all that together. Today, we offer a line
of premium sustainable seafood products for professional chefs and home cooks. Being vertically integrated allows us to meticulously control every aspect of our
process, from broodstock and hatchery to nursery, grow out, harvesting, processing
and packaging. All of us are committed to ensuring exceptional quality. We chose to site our farm
in Vân Phong Bay, one of Vietnam’s most beautiful marine areas.
The bay contains over a hundred thousand acres of pristine ocean water. Our sea pens are located eight to twelve miles offshore, nestled amongst remote islands,
surrounded by beautiful beaches and rocky-faced cliffs. Before our fish go to
sea, they spend their first four months in nursery tanks which utilize
innovative recirculation technology that we’ve perfected over many years of farming. Our nursery teams feed, grade, and move
the fish through progressively larger tanks that provide optimal temperature and salinity that
give them a strong start. When they’re ready they’re
transferred to the sea pens and they’re stocked at low densities which keeps stress to a minimum and conditions
consistently clean. We leveraged barramundi’s natural
flexitarianism to nourish them on a sustainable diet containing probiotics
and phytonutrients such as oregano and cinnamon to ensure their health. This allows us to minimize the use of antibiotics and we’re able to guarantee
our products are contaminant-free. Our harvesting process is based on the
traditional Japanese Ikejime method, which is the oldest and most reliable
means of humane slaughter. It’s been practiced in Japan
for centuries to enhance flesh quality. You can taste the difference. After our fish are harvested, we fallow our pens and cultivate seaweed on our
farms. The seaweed absorbs nutrients and provides habitat which supports the
diversity and abundance of the ecosystem. When the fish arrive in our processing
facility, they’re temperature checked, inspected and sorted for size. From there,
the scales are removed, they’re washed and transfer it into our filleting room,
where they’re hand fabricated. Every fish is quality checked.
The bones are removed, they’re x-rayed, skinned, if needed, and then they go
through a sophisticated computerized portioning system which laser scans each
fillet to ensure precise portion control. After portioning, our fish are vacuum
packed and individually quick-frozen to negative 45 Celsius within one hour,
which preserves them at peak freshness and flavor. The frozen portions are then
packed in retail bags or bulk cases which are held in our cold storage. From there, they are loaded into containers that transport Australis Barramundi to
